greengage and vanilla clafoutis

Our fruit of the month is the GREENGAGE. Green and sweet, this is a truly delicious classic plum, sometimes considered to be the finest of dessert plums. Like al plums, it is a good source of potassium, fibre and vitamins A and C. They are rich in anti-oxidants and help the body to produce serotonin.

SERVES 4 -6

Ingredients

  • 4½fl oz (125ml) milk
  • 4½fl oz (125ml) double cream
  • 2 -3 drops vanilla essence
  • 4 eggs
  • 6 oz (170g) caster sugar
  • 1 tbsp plain flour
  • 1 oz (30g) butter
  • 1lb 2oz (500g) greengages, halved and stones
  • 2 tbsps light brown sugar
  • 1 oz (30 g) flaked almonds (optional)
  • Icing sugar, to dust
  • Cream, to serve

method

Preheat the oven to 180C/350F/Gas 4.

Pour milk, cream and vanilla essence into pan and boil for a minute.

Remove from heat and allow to cool. Beat eggs and caster sugar together until light and creamy.

Fold flour into the mixture a little at a time. Pour the milk and cream onto the egg mixture and set aside.

Place butter in an ovenproof dish and heat in the oven until foaming.

Add greengages and brown sugar and bake for 5 mins, then pour on batter and scatter with flaked almonds, if using, Cook for about 30 mins, until golden and set, but still light and soft inside.

Dust with icing sugar and serve with cream.
