cucumber raita
Our vegetable of the month is CUCUMBER. Or is it a fruit? Opinion is divided. What do you think? High in vitamin C, and containing a good amount of vitamin A and the minerals molybdenum, potassium, manganese and folate, it’s definitely too good to ignore!
SERVES 6
Ingredients
- 3oz (75g) peeled cucumber
- 7oz (210g) natural yoghurt
- 2 spring onions, finely chopped
- 1 small clove garlic, crushed
- Salt and pepper
- Cayenne pepper and cumin seed, to serve
- Crudités –sliced pepper, carrot and celery batons for dipping
Method
Slice cucumber thinly, put in a basin and sprinkle with salt. Leave for an hour until liquid has drained. Drain, pat dry. Mix cucumber, yoghurt, spring onion and garlic and season to taste. Pour into a serving bowl, sprinkle with cayenne and cumin seed before serving. Serve with the crudités and breadsticks
