The Naked Grocer’s Halloween Hotpot
Serves 4
Ingredients
- 600g potatoes, sliced (use a waxy one, like Desiree)
- 600g pumpkin, cubed
- 8 good quality pork sausages, halved if preferred
- 1 large parsnip, sliced
- I large carrot, sliced
- 1 dozen smallish button mushrooms
- 1 large onion, sliced
- 1 pint vegetable stock
- Vegetable oil
- 2 large knobs butter
- 4 bay leaves or 1 bouquet garni
- 1 tbsp chopped parsley
- Salt and freshly ground black pepper
Method
Warm 1 tbsp in a large saucepan on medium heat, add onions and sausages until sausages take on some colour (3 -4 minutes) Add large knob butter and gradually add remaining veg, (but not potatoes) stirring all the time.
When starting to soften (about 5 mins) gradually stir in stock. Put splash oil in large oven proof casserole dish , heat gently and layer half the potatoes on the bottom. Gently add sausages and veg.
Add half parsley, bay leaves and knob of butter, simmer on top of stove for few minutes. Season to taste. Layer remaining potatoes on top, bake in pre-heated oven 180C for 1 hr until top crispy.
